Experimental and numerical study on the shrinkage-deformation of carrot slices during hot air drying

In order to further understand the mechanism of material volume change in drying process, numerical simulations (considering or neglecting shrinkage) heat and mass transfer during convective carrot slices under constant controlled temperature relative humidity were carried out. Simulated results validated with experimental data. The simulation show that Quadratic model fitted well moisture ratio data trend average errors 5.9% 8.1%, respectively. Additionally, considering shrinkage distributions are closer than disregarding shrinkage. content was significantly related dried tissue.
